  • 4 pieces boneless, skinless chicken breasts pounded to 1/2-inch thickness
  • 1 cup all-purpose flour for dredging
  • 2 large eggs beaten
  • 1.5 cups seasoned Italian breadcrumbs
  • 0.5 cup grated Parmesan cheese
  • 1.5 cups vegetable oil for frying
  • 2 cups marinara sauce
  • 1.5 cups shredded mozzarella cheese
  • 0.25 cup Parmesan cheese grated, for topping
  • 2 tablespoons fresh basil chopped, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.
  2. Set up three shallow bowls: one with flour, another with beaten eggs, and the last with breadcrumbs mixed with 0.5 cup Parmesan cheese.
  3. Dredge each chicken breast in flour, dip in the beaten eggs, and coat with the breadcrumb-Parmesan mixture, pressing gently to adhere.
  4. Heat vegetable oil in a large skillet over medium-high heat. Once shimmering, fry the chicken until golden brown, about 3–4 minutes per side. Drain on paper towels.
  5. Spread a thin layer of marinara sauce on the baking sheet. Place the fried chicken on top and spoon 2–3 tablespoons of marinara over each piece. Sprinkle with mozzarella and a bit of Parmesan.
  6. Bake for 20–25 minutes, until the cheese is melted and bubbly, and the chicken reaches an internal temperature of 165°F (74°C).
  7. Remove from the oven and let rest for 5 minutes. Garnish with fresh basil before serving.

Notes

For extra crunch, use panko breadcrumbs in the coating.
