Description

This Chicken Ranch Pasta Salad is a flavorful mix of fusilli pasta, tender chicken, crispy bacon, and vibrant veggies, perfect for a quick meal or picnic.


Ingredients

Scale
  • 3 cups uncooked fusilli or rotini pasta
  • 5 strips bacon cut into small pieces
  • 1/2 medium red onion chopped
  • 2 cups shredded cooked/rotisserie chicken
  • 2 cups grape or cherry tomatoes cut into halves
  • 1/2 cup ranch dressing
  • Fresh parsley chopped, to taste (optional)

Instructions

  1. Prepare the ranch dressing first and refrigerate until needed.
  2. Boil a large pot of salted water and cook the pasta according to package instructions, then rinse under cool water and drain thoroughly.
  3. Cut the bacon into small pieces and cook until crispy, then transfer to a paper towel-lined plate to drain.
  4. Chop the onion, chicken, and tomatoes, and add them to a large salad bowl along with the pasta and bacon.
  5. Toss with ranch dressing, starting with 1/2 cup and adding more to taste. Season with salt and pepper as desired. Serve immediately or chill before serving.

Notes

Feel free to use leftover rotisserie chicken for convenience.
This salad can be made a few hours ahead; just keep it chilled until serving.
