- 1.5 lb english cucumber
- 1/5 lb roma tomatoes, seeded (6-8)
- 1 red onion
- 1/4 cup red wine vinegar
- 1/4 cup olive oil, extra virgin
- 1/2 tsp salt
- 1/2 tsp pepper
Instructions
- Cut the cucumbers and tomatoes in half and remove the seeds, then chop into roughly 1" chunks.
- Finely slice the red onion into half moons and add all the chopped vegetables into a large bowl.
- In a separate bowl, whisk together the red wine vinegar, olive oil, salt, and pepper.
- Pour the dressing over the vegetables and toss gently to coat evenly.
- Cover and refrigerate for 1 hour to overnight, then toss again before serving chilled.
Notes
For added flavor, let the salad sit longer in the refrigerator.
