Description

This Comforting Zuppa Toscana is a delightful blend of flavors featuring sausage, bacon, creamy broth, and tender potatoes, making it an ideal meal for a cozy night in.

Ingredients

Scale
  • 4 slices thick-cut bacon, diced
  • 1 pound hot Italian sausage
  • 1 medium yellow onion, diced
  • 4 garlic cloves, minced
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 6 cups chicken broth
  • 4 Yukon gold potatoes, cut into 1 inch pieces
  • 4 cups kale, chopped, large stems removed
  • 1 cup heavy cream

Instructions

  1. In a large stock pot over medium heat, cook the bacon until crisp. Remove bacon with a slotted spoon to a paper towel-lined plate. Drain excess grease, but keep the pot as is.
  2. Return the pot to medium heat. Add the Italian sausage, breaking it up, and brown for about 3 to 5 minutes until no longer pink.
  3. Stir in the onions, garlic, salt, pepper, and crushed red pepper flakes. Cook for 3 minutes.
  4. Add the chicken broth and bring to a boil. Stir in the potatoes, reduce heat to a simmer, and cook until tender, about 15 minutes.
  5. Mix in the kale and allow it to wilt for about 2 minutes. Then stir in the heavy cream.
  6. Return the cooked bacon to the pot, and adjust salt and pepper to taste.

Notes

For added depth of flavor, consider using homemade chicken broth.
Feel free to substitute kale with spinach if preferred.
Adjust the amount of crushed red pepper for desired spice level.
