- 10 ounces fettuccine pasta (or your favorite pasta)
- 1 teaspoon salt
- 2 tablespoons butter
- 3 cloves garlic, chopped
- 1 cup full-fat cottage cheese
- 1/2 cup parmesan cheese, freshly grated
- 1/2 cup milk
- salt and pepper (to taste)
Instructions
- Bring a large pot of salted water to boil over medium-high heat.
- Add the fettuccine and cook until al dente, about 2-3 minutes for fresh pasta or 8-10 minutes for dried.
- Reserve ½ cup of pasta water, then drain and set aside.
- In a large skillet, melt the butter over medium heat until bubbly, about 1 minute.
- Add the garlic and sauté until fragrant, about 30-60 seconds, taking care not to burn it.
- Transfer the garlic butter to a blender and add the cottage cheese, Parmesan cheese, and milk. Blend until smooth and creamy, about 1-2 minutes.
- Pour the blended sauce back into the skillet and heat over medium-low, stirring constantly until warmed through and thickened, about 3-5 minutes.
- Add reserved pasta water as needed to adjust consistency. Season with salt and pepper to taste.
- Toss the cooked fettuccine in the creamy cottage cheese Alfredo sauce until evenly coated. Serve warm with additional Parmesan if desired.

Use fresh pasta for a quicker cooking time.
