Description

  • 1½ cups cottage cheese
  • 1 cup shredded sharp cheddar cheese
  • ½ cup sour cream
  • ½ cup milk
  • ¼ cup shredded parmesan cheese
  • 2 teaspoons cornstarch
  • ½ teaspoon salt
  • ¼ teaspoon onion powder
  • ¼ teaspoon dry mustard powder optional

Instructions

  1. Cook elbow macaroni in salted boiling water according to package directions. Reserve ½ cup of the pasta water, then drain and set the pasta aside.
  2. Blend cottage cheese, cheddar cheese, sour cream, milk, Parmesan cheese, cornstarch, salt, onion powder, and optional dry mustard in a blender until smooth.
  3. Pour the blended mixture into a large saucepan over medium-low heat. Stir frequently until the sauce becomes smooth and creamy, which should take about 6 to 8 minutes.
  4. Stir in the cooked pasta to the sauce, ensuring the pasta is well coated. Cook for an additional 1 to 2 minutes to heat through.
  5. Allow the dish to rest for a few minutes to thicken slightly, adding reserved pasta water as necessary to adjust consistency.

Notes

For a richer flavor, consider using full-fat cottage cheese and sharp cheddar cheese.
