Description

This Cowboy Chicken recipe features juicy chicken cutlets topped with black beans, corn, and a delicious blend of spices. Perfect for a quick and tasty dinner, it’s packed with flavor and color, making it an ideal choice for anyone looking for an easy homemade meal.


Ingredients

  • 4 chicken cutlets or 2 chicken breasts cut horizontally
  • 1½ teaspoons smoked paprika
  • ¾ teaspoon garlic powder
  • ¾ teaspoon onion powder
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil divided
  • 1 small yellow onion diced
  • 1 (15 ounce) can black beans drained and rinsed
  • 1 (15.25 ounce) can corn kernels or southwest corn, drained
  • 1 (10.5 ounce) can diced tomatoes with chilies or petite diced tomatoes, drained
  • 2 tablespoons fresh lime juice juice from 1 lime
  • ¼ cup barbecue sauce any variety
  • ¾ cup shredded mexican cheese blend
  • chopped fresh cilantro , jalapeños, and avocado for serving

Instructions

  1. Preheat the oven to broil at 500°F and set the rack 6 inches below the broiler.
  2. In a small bowl, mix together the smoked paprika, garlic powder, onion powder, salt, and pepper. Reserve 1½ teaspoons of this seasoning for the cowboy caviar.
  3. Coat both sides of the chicken with the seasoning blend.
  4. In a large oven-safe skillet, heat 1 tablespoon of olive oil over medium-high heat. If necessary, cook the chicken in batches for 3-4 minutes on each side until fully cooked (165℉). Remove and set aside on a plate.
  5. Lower the heat to medium, add the other tablespoon of oil, and sauté the onion until soft, about 4-5 minutes.
  6. Add the black beans, corn, diced tomatoes, reserved seasoning, and lime juice. Stir well and cook for 4-5 minutes until heated fully.
  7. Return the cooked chicken to the skillet, glaze with barbecue sauce, and sprinkle with shredded cheese.
  8. Broil for 2-3 minutes, until the cheese is melted and bubbly.
  9. Serve with chopped cilantro, sliced jalapeños, and avocado as desired.

Notes

Feel free to use leftover cooked chicken for a quicker meal.
You can adjust the spice level by adding more jalapeños or hot sauce.
This dish pairs wonderfully with rice or a fresh salad.
