Description

Ingredients

  • 2 Tbsp salted butter
  • 1 Tbsp all-purpose flour
  • ¾ cup heavy cream (room temperature)
  • 1 tsp granulated sugar
  • 12 oz. bag frozen peas (thawed and rinsed)
  • ¼ tsp salt
  • ⅛ tsp black pepper (freshly cracked)

Instructions

  1. Gather your ingredients.
  2. Rinse the frozen peas.
  3. Melt butter in a large sauté pan over medium heat and add flour to create a light roux, stirring constantly for 2-3 minutes.
  4. Add room temperature heavy cream to the roux and whisk to combine.
  5. Once the cream mixture has thickened to the point where it’s still loose enough to drip from a spoon, but clings to the back of one without running off, lower the heat to medium-low.
  6. Add sugar, salt, and pepper.
  7. Add the thawed and rinsed peas.
  8. Stir to combine and enjoy!

Notes

For a richer flavor, use unsalted butter.
Make sure to use room temperature heavy cream for a smooth mixture.
Add a pinch of nutmeg for a touch of warmth.
