- 1 pint cherry tomatoes halved
- 8 ounce block cream cheese very soft
- 4 garlic cloves minced
- ½ teaspoon salt plus more to season the chicken
- ¼ teaspoon pepper plus more to season chicken
- 2 tablespoons fresh basil chopped plus more for garnish
- ¾ cup shredded mozzarella cheese
Instructions
- Preheat your oven to 425°F.
- Arrange the chicken breasts in a large baking dish in a single layer, seasoning generously with salt, pepper, and Italian seasoning.
- In a medium bowl, combine cream cheese, olive oil, garlic, salt, pepper, and fresh basil. Stir in the halved cherry tomatoes gently until mixed.
- Spread the mixture over the chicken, ensuring it's well covered.
- Bake for 30-40 minutes, depending on chicken thickness, until there is no pink in the center.
- Sprinkle shredded mozzarella on top and broil for 4-5 minutes until bubbly and golden.
- Garnish with more fresh basil before serving.
Notes
To easily soften cream cheese, microwave it in 30-second bursts.
For extra flavor, let the chicken marinate in the seasoning for a couple of hours before baking.
