  • 2 teaspoons italian seasoning
  • 2 tablespoons olive oil
  • 1 pint cherry tomatoes halved
  • 8 ounce block cream cheese very soft
  • 4 garlic cloves minced
  • ½ teaspoon salt plus more to season the chicken
  • ¼ teaspoon pepper plus more to season chicken
  • 2 tablespoons fresh basil chopped plus more for garnish
  • ¾ cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 425°F.
  2. Arrange the chicken breasts in a large baking dish in a single layer, seasoning generously with salt, pepper, and Italian seasoning.
  3. In a medium bowl, combine cream cheese, olive oil, garlic, salt, pepper, and fresh basil. Stir in the halved cherry tomatoes gently until mixed.
  4. Spread the mixture over the chicken, ensuring it's well covered.
  5. Bake for 30-40 minutes, depending on chicken thickness, until there is no pink in the center.
  6. Sprinkle shredded mozzarella on top and broil for 4-5 minutes until bubbly and golden.

Notes

To easily soften cream cheese, microwave it in 30-second bursts.
For extra flavor, let the chicken marinate in the seasoning for a couple of hours before baking.
