- 1 cup chicken broth
- 1/2 cup dry white wine (or additional chicken broth)
- 1 (10.5 oz) can cream of chicken and herb soup
- 1 1/2 cups orzo
- 1 (8 oz) can mushrooms (well drained)
- 1 (2 oz) packet Lipton onion soup mix (dry mix only)
- 1 1/2 lbs boneless, skinless, thin chicken breasts
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 cup shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
Instructions
- Preheat your oven to 375°F and prepare a 9×13 casserole dish with nonstick spray.
- In a bowl, whisk together chicken broth, white wine, and cream of chicken soup until well mixed. Stir in orzo, mushrooms, and onion soup mix. Pour this mixture into the casserole dish.
- Season both sides of the chicken breasts with garlic powder, onion powder, salt, and pepper. Place them on top of the orzo mixture. Cover with foil tightly.
- Bake for 55 to 60 minutes, removing the foil after 30 minutes. Check for doneness; the chicken should be fully cooked, and the orzo should be tender. If there’s excess liquid, bake uncovered for an additional 5 minutes.
- Once baked, turn off the oven and sprinkle the mozzarella and parmesan cheese over the chicken. Return it to the warm oven for 3 to 5 minutes, until the cheese is melted.
- Let the casserole sit for 5 minutes after removing from the oven. Fluff the orzo with a fork before serving, and garnish with additional parmesan and parsley if desired.
Notes
For added flavor, consider marinating the chicken in the broth and seasonings for 30 minutes before cooking.
You can substitute the white wine with extra chicken broth to keep it alcohol-free.
Feel free to add vegetables like spinach or bell peppers for more nutrition and color.
