- 6 ears corn, husk and silk removed
- 4 tablespoons softened butter
- salt, to taste
- pepper, to taste
- 1 cup cilantro lime crema
- cilantro, for garnish
- Tajin, for garnish
- crumbled cotija cheese, or queso fresco, for garnish
Instructions
- Preheat the oven to 400°F.
- Arrange the corn on a large baking sheet and coat each ear with softened butter, seasoning with salt and pepper.
- Roast the corn at 400°F for 20 minutes. To enhance the flavor, switch the broiler on high for the last 2 minutes and rotate until charred on all sides.
- Once done, remove the corn from the oven, generously spread cilantro lime crema on top, and garnish with cilantro, Tajin, and cotija cheese. Enjoy!

Feel free to adjust the seasoning to your liking.
Using fresh corn will give you the best flavor and texture.
For an added kick, include more Tajin as a garnish.
