Description

This creamy spinach artichoke butter beans dish is a delightful blend of flavors, featuring tender butter beans, fresh spinach, and a rich cream sauce. It’s easy to prepare and perfect for a quick dinner or a healthy meal option that’s both comforting and satisfying.

  • 1 tablespoon olive oil
  • 2 shallots thinly sliced
  • ½ cup canned artichoke hearts drained and roughly chopped
  • 2 cloves garlic minced
  • 28 ounces (2 cans) butter beans drained and rinsed
  • 1 ½ cups vegetable stock
  • ½ cup whole cream
  • ¼ cup grated parmesan cheese
  • 3 cups baby spinach
  • ½ teaspoon sea salt
  • ½ teaspoon ground black pepper
  • 2 tablespoons lemon juice
  • 1 tablespoon chopped fresh parsley optional topping

Instructions

  1. Heat olive oil in a large skillet over medium heat, then add shallots; cook for 3 to 5 minutes until translucent.
  2. Add garlic and artichoke hearts; cook for 2 minutes while stirring often.
  3. Stir in rinsed butter beans and vegetable stock; simmer for 10 minutes until reduced. Incorporate cream and parmesan, then simmer for an additional 5 minutes.
  4. Mix in baby spinach, sea salt, and black pepper, removing from heat once spinach wilts. Add lemon juice and stir well.
  5. Serve topped with fresh parsley and enjoy with slices of crusty bread.

Notes

Feel free to substitute fresh spinach with frozen spinach; just make sure to thaw and drain it well.
You can adjust the seasoning to taste, using more or less salt and pepper as desired.
For added flavor, consider adding red pepper flakes for a spicy kick.
