Ingredients

Scale
  • 1 tablespoon extra virgin olive oil
  • 4 garlic cloves, minced
  • 4 tbsps organic all-purpose flour
  • 1 ½ tbsps tuscan marry me blend
  • 1 teaspoon smoked paprika
  • 1 teaspoon sea salt
  • 34 tbsps organic tomato paste
  • 56 sundried tomatoes, optional
  • 4 cups chicken or vegetable stock
  • 1 ½ cups organic heavy cream
  • ½ lemon, freshly-squeezed
  • 1 cup chopped kale, organic
  • 2 cups cherry or grape tomatoes, halved or whole
  • 2 (8 oz.) packages organic cheese + spinach tortellini
  • 2 bay leaves, optional
  • 1 cup freshly-grated parmesan

Instructions

  1. Heat olive oil in a medium-sized dutch oven over medium-high heat.
  2. Add minced garlic, sundried tomatoes, and fresh tomatoes; sauté until fragrant.
  3. Stir in Tuscan Marry Me Blend, smoked paprika, and sea salt until combined.
  4. Incorporate organic tomato paste and flour, stirring continuously.
  5. Gradually pour in chicken or vegetable stock, mixing well to avoid lumps until thickened.
  6. Add lemon juice, heavy cream, tortellini, bay leaves, and kale; stir to combine and let simmer for 8-10 minutes.
  7. Once the tortellini float and are tender, stir in freshly-grated parmesan until melted and smooth.
  8. Serve immediately, topped with more parmesan if desired, alongside garlic bread or a fresh salad.

Notes

For extra flavor, use herb roasted tomatoes instead of fresh tomatoes.
If you prefer a lighter soup, you can reduce the heavy cream or use a low-fat alternative.
Store leftovers in an airtight container in the fridge for up to 3 days.
