Description

Enjoy crispy fried zucchini that’s bursting with flavor! This easy recipe uses fresh zucchini, panko breadcrumbs, and eggs for a delightful dish perfect for any meal.


Ingredients

  • 2 medium zucchini, sliced
  • 2 cups panko breadcrumbs
  • 1/2 tsp salt
  • 1 cup flour
  • 3 eggs, beaten
  • Oil for frying

Instructions

  1. Heat oil in a large skillet over medium heat.
  2. Slice zucchini into 1/4" rounds and set aside.
  3. In a bowl, whisk together the panko breadcrumbs and salt.
  4. Place flour in a shallow plate and beaten eggs in another shallow bowl.
  5. Dredge each zucchini round in flour, dip in beaten eggs, then coat with the breadcrumb mixture.
  6. Fry the zucchini rounds in the hot oil until golden brown on both sides, repeating until all slices are breaded and fried.

Notes

For extra crunch, consider adding some grated parmesan cheese to the breadcrumb mixture.
You can use various seasonings in the breadcrumbs for added flavor, such as garlic powder or Italian herbs.
Make sure the oil is hot enough before frying to ensure crispy results.
