- 4 boneless-skinless chicken cutlets (approximately 1 ½ pounds total, each piece approximately ½ inch thick)
- ⅓ cup balsamic glaze
- ¼ cup lemon juice
- 1 tablespoon honey
- 1 tablespoon minced garlic
- 1½ teaspoons italian seasoning blend
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 3 tablespoons olive oil (divided; 2 tablespoons to cook the chicken and 1 tablespoon to mix with the tomatoes and cheese)
- ¾ cup cherry tomatoes (approximately 18–20 tomatoes)
- ½ cup fresh mozzarella pearls (approximately half of an 8-ounce package)
- 1 tablespoon fresh basil (chopped plus additional for garnish)
Instructions
- Pound the chicken cutlets to an even thickness.
- In a bowl, mix balsamic glaze, lemon juice, honey, garlic, italian seasoning, salt, and pepper.
- Marinate the chicken cutlets in the mixture for at least 10 minutes.
- Heat 2 tablespoons of olive oil in a pan over medium heat.
- Add marinated chicken and cook for about 7-8 minutes per side until cooked through.
- While chicken is cooking, mix remaining olive oil with cherry tomatoes and mozzarella pearls.
- Once chicken is done, serve it topped with the tomato and mozzarella mixture along with fresh basil.

Ensure chicken is pounded evenly for uniform cooking.
Can substitute balsamic glaze with regular balsamic vinegar for a sharper flavor.
