- 2 tablespoons olive oil
- 1 medium red onion, chopped small
- 4 cloves garlic, minced
- 2 jalapeño peppers, seeded and chopped
- 2 (15-ounce) cans black beans, drained and rinsed
- 1/2 teaspoon ground cumin
- 1 teaspoon salt or to taste
- 3 tablespoons fresh lime juice
- 1/4 cup chopped cilantro, plus more for serving

Instructions
- In a small pan, warm the olive oil over medium heat. Add the chopped red onion, garlic, and jalapeño peppers, sautéing for about 5-8 minutes while stirring frequently. Remove from heat.
- In a food processor, combine the drained and rinsed black beans with the cooked onion, garlic, and peppers, along with cumin, salt, lime juice, and cilantro. Process until smooth, leaving some chunks if desired.
- Transfer the mixture to a serving dish. Top with extra cilantro, vegan cheese if using, and pickled red onions if desired. Serve with tortilla chips.
Notes
For added heat, leave some seeds in the jalapeños.
Use lime juice to enhance flavors and freshness.
