Description

This Easy Blackberry Pie features a buttery crust filled with fresh blackberries, lemon juice, and vanilla, providing an irresistible flavor. Perfect for gatherings and sure to please guests with its simple preparation and delightful taste!


Ingredients

  • 2 1/2 cups flour
  • 1/2 tbsp sugar
  • 1/2 tsp salt
  • 1 cup butter, cold & diced
  • 7 tbsp cold water
  • 1 egg + 1 tbsp water for egg wash
  • sugar for sprinkling, optional
  • 2 tbsp water
  • 2 tsp lemon juice
  • 1 tsp vanilla
  • 6 cups blackberries
  • 3/4 cup sugar
  • 5 tbsp cornstarch

Instructions

  1. Make the crust by combining flour, sugar, and salt in a food processor.
  2. Add cold, diced butter and pulse until coarse crumbs are formed.
  3. Pour in cold water and pulse until moist clumps form.
  4. Transfer dough to parchment paper, divide into balls, and flatten into discs without kneading.
  5. Wrap each disc in plastic wrap and refrigerate for 1 hour.
  6. Preheat the oven to 400 degrees when crust is ready.
  7. Prepare the blackberry filling by combining water, lemon juice, vanilla, and blackberries in a saucepan over medium heat.
  8. Stir in sugar and cornstarch gently and cook until thickened, then set aside.
  9. Sprinkle flour on the counter and roll out the bottom crust to a 12" diameter.
  10. Wrap the crust around the rolling pin and transfer it to a 9" pie plate.
  11. Add the blackberry mixture evenly, avoiding edges to ensure a good seal.
  12. Roll out the remaining crust and place it over the pie.
  13. Trim the edges and seal them using fingers or a fork.
  14. Whisk together 1 egg and 1 tbsp water, then brush over the top of the pie.
  15. Optional: Sprinkle sugar on top of the pie.
  16. Cut slits in the center of the pie for steam to escape.
  17. Bake for 15 minutes, then lower the temperature to 350 degrees.
  18. Continue baking for 45-50 minutes until the filling is bubbly and the crust is golden brown.
  19. Check at 30 minutes; if the crust is brown, cover the pie to prevent further browning.
  20. Allow the pie to cool at room temperature before slicing.

Notes

For a sweeter pie, add additional sugar to the blackberry filling according to taste.
Ensure the butter is cold for a flaky crust.
Serve with vanilla ice cream for an extra treat.
