Ingredients

  • 2 packages Boursin (5.3 oz each)
  • 1.5 cups chopped de-seeded tomatoes (vine-ripened or roma recommended)
  • 1/4 cup packed fresh basil leaves, chopped
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 clove garlic, pressed or very finely minced
  • salt to taste
  • pepper to taste
  • balsamic reduction (Alessi brand recommended)
  • crackers or crostini

Instructions

  1. Allow the Boursin cheese to soften on the counter for 15-20 minutes while prepping the other ingredients.
  2. In a small mixing bowl, combine the chopped tomatoes, basil, olive oil, balsamic vinegar, garlic, salt, and pepper. Mix well and let it sit for 5 minutes to allow the salt to draw juices from the tomatoes.
  3. Spread the softened Boursin cheese evenly in an 8-9 inch shallow serving dish or pie pan using the back of a spoon.
  4. Pour the bruschetta mixture over the Boursin cheese, keeping the juices in the mixing bowl.
  5. Drizzle balsamic reduction on top and garnish with additional basil leaves. Serve immediately with crackers or crostini.

Notes

Ensure the Boursin cheese is softened for easier spreading.
Feel free to adjust the amount of garlic according to your taste preference.
Use the leftover juices from the tomato mixture as a dressing for salads.
