Description

These easy caramel apple empanadas are a delightful treat made with soft cream cheese, sweet apple pie filling, and a rich caramel glaze. They’re perfect for any occasion and are simple to prepare, making them ideal for dessert lovers seeking quick and tasty recipes.


Ingredients

  • 2 boxes refrigerated pie crust (14.1 ounce each)
  • 1 can apple pie filling (20 ounce)
  • 1 package cream cheese, softened (8 ounce)
  • ⅔ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg, separated
  • 2 ½ cups powdered sugar
  • ¼ cup caramel ice cream topping
  • 2 tablespoons milk

Instructions

  1. Preheat the oven to 425 degrees F. Allow pie crusts to come to room temperature.
  2. Separate the egg white from the egg yolk in two small bowls. Whisk each separately and set aside.
  3. Transfer apple pie filling to a small bowl and chop apple slices into small bits.
  4. In a mixing bowl, beat the cream cheese with granulated sugar and vanilla extract until smooth.
  5. Unroll pie crusts and cut circles with a 4-inch biscuit cutter, re-rolling scraps as necessary.
  6. Spoon half a scoop of apple pie filling and cheesecake filling into the center of each crust circle. Brush edges with whisked egg white.
  7. Fold each empanada in half, sealing edges by pinching or pressing with a fork. Place on a parchment-lined baking sheet.
  8. Prick each empanada with a fork before baking, then brush with whisked egg yolk.
  9. Bake for about 15 minutes or until golden brown, then cool on a wire rack.
  10. Whisk together powdered sugar, caramel ice cream topping, and milk to make the glaze. Adjust milk for desired consistency.
  11. Dip cooled empanadas into the caramel glaze and place back on the parchment-lined baking sheet to set.

Notes

Make sure to chop the apple slices finely for better flavor distribution.
Experiment with different fillings like cherry or peach for variation.
These empanadas can be frozen before baking for later enjoyment.
