Description

Ingredients

  • 2 (15-ounce) cans black beans, drained and rinsed
  • 1 (15-ounce) can black-eyed peas, drained and rinsed
  • 1 large red bell pepper, seeded and diced
  • 1 large yellow bell pepper, seeded and diced
  • 2 fresh jalapeños, seeded and diced
  • 1 ½ cups frozen corn kernels, thawed and drained
  • ½ cup finely diced red onion
  • ½ cup finely chopped fresh cilantro
  • 1 cup fresh seeded and diced tomato, optional
  • 2 fresh avocados, diced and added just before serving, optional
  • ¼ cup red wine vinegar
  • 2 heaping tablespoons honey
  • 1 fresh lime, juiced
  • 1 tablespoon fine sea salt
  • 2 chipotles in adobo plus 2 teaspoons sauce from the can
  • 1 cup avocado or vegetable oil
  • 1 teaspoon dried oregano
  • 1 teaspoon black pepper

Instructions

  1. In a large bowl, mix the black beans, black-eyed peas, red bell pepper, yellow bell pepper, jalapeños, corn, red onion, cilantro, and optional diced tomato.
  2. In a blender, combine the red wine vinegar, honey, lime juice, salt, chipotles, and sauce; blend until smooth. While blending on low speed, slowly add the oil until the dressing is thickened. Stir in the oregano and black pepper, taste and adjust seasonings as needed.
  3. Pour half of the dressing over the bean and vegetable mixture; stir well to combine. Cover and refrigerate for at least 3 hours before serving.
  4. Before serving, stir the cowboy caviar again and adjust dressing if desired. If using, add diced avocado just before serving. Leftover dressing keeps well in the fridge for a few days, and makes a great marinade.
  5. Serve with tortilla chips or as a topping for tacos.

Notes

For the best flavor, let the cowboy caviar marinate in the fridge for a few hours before serving.
Feel free to customize the veggies based on your preferences or seasonal availability.
