Description

This Easy Creamy Corn Pasta combines the sweetness of corn with rich Parmesan cheese for a delightful meal. Perfect for quick dinners, it’s both comforting and simple to prepare.


Ingredients

  • ½ pound (8 ounces) penne pasta
  • 3 tablespoons butter
  • 1/2 tablespoon flour
  • 2 cloves garlic, minced
  • 2 cups corn, fresh or frozen (kernels from about 3 small ears fresh corn)
  • 2/3 cup heavy cream (or half and half)
  • 1 tablespoon lemon juice, freshly squeezed
  • 1/2 cup parmesan cheese (or pecorino cheese), freshly grated (plus more for garnish)
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon ground black pepper (or to taste)
  • 1/4 cup fresh basil (and more for garnish, if desired)

Instructions

  1. Bring a large pot of salted water to a boil over medium-high heat. Add the pasta and cook until al dente, approximately 8–10 minutes or as per package instructions. Reserve ½ cup of pasta water, drain, and set aside.
  2. In a large skillet, melt the butter over medium heat until sizzling, about 1 minute. Whisk in the flour and cook for 1 minute to eliminate any raw flavor.
  3. Add the minced garlic and corn, cooking for around 2 minutes until fragrant and the corn softens.
  4. Pour in the heavy cream, freshly squeezed lemon juice, and ¼ cup of reserved pasta water. Stir continuously over medium heat for about 1 minute until the mixture is smooth and slightly thickened. Stir in the Parmesan cheese until melted, adding more pasta water for a looser sauce if needed.
  5. Season with salt and pepper as preferred. Add the drained pasta and fresh basil to the skillet, tossing until thoroughly coated.
  6. Serve immediately, garnished with extra Parmesan and fresh basil if desired.

Notes

For a vegetarian option, ensure that the cheese used is not made with animal rennet.
Adjust the seasoning according to your taste, adding more lemon juice for extra zing if desired.
