Ingredients

Scale
  • 1 English cucumber
  • 1 teaspoon kosher salt
  • 12 ounces Campari tomatoes, or cocktail tomatoes
  • 1/4 small red onion, peeled and thinly sliced
  • 3 tablespoons champagne vinegar, red wine vinegar, or cider vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1/3 cup chopped fresh dill
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Slice the cucumber in half lengthwise and scoop out the seeds, discarding them.
  2. Cut the cucumber into thick half-moons and place in a large bowl. Sprinkle with 1/2 teaspoon of kosher salt and allow to sit for about 5 minutes to release moisture.
  3. Discard any excess cucumber water that has collected.
  4. Cut the tomatoes into thick wedges and add them to the bowl with the cucumber and sliced red onion.
  5. Drizzle the mixture with vinegar, olive oil, honey, and the remaining kosher salt and black pepper. Toss gently to combine all ingredients.
  6. Sprinkle chopped dill over the salad and toss again to mix well.
  7. Serve chilled or at room temperature.

Notes

Adjust the seasoning to your taste; feel free to add more vinegar if you prefer a tangier flavor.
For a different twist, incorporate other herbs like parsley or mint for added freshness.
This salad can be made a few hours ahead; just keep it chilled before serving.
