Description

This Easy Oven Roasted Zucchini features irresistible flavor and simple preparation. Made with fresh zucchini, olive oil, and aromatic herbs, it’s a healthy side dish perfect for quick dinners or as a tasty addition to any meal.


Ingredients

  • 3 medium zucchini, ends trimmed and sliced into 8 sticks each
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon dried oregano
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • Optional toppings: freshly grated parmesan, lemon zest, red pepper flakes, or flaky sea salt

Instructions

  1. Preheat the oven to 425°F and prepare a large baking sheet with parchment paper.
  2. Slice each zucchini in half lengthwise, then cut each half again to create quarters. Finally, cut each quarter into half crosswise to form 8 sticks per zucchini.
  3. In a large bowl, combine the zucchini sticks, olive oil, garlic powder, onion powder, oregano, sea salt, and black pepper. Mix until the zucchini is evenly coated.
  4. Lay the zucchini in a single layer on the baking sheet, cut side down for maximum browning.
  5. Roast for 20–25 minutes, flipping them halfway through, until they are golden brown and tender with crispy edges.
  6. Optional: Top with parmesan, lemon zest, red pepper flakes, or flaky sea salt before serving. Enjoy with grilled chicken, burgers, or a side of hummus.

Notes

Fresh herbs can be substituted with dried herbs if necessary, just use a smaller amount.
Ensure the zucchini pieces are evenly sized for uniform cooking.
For extra flavor, marinate the zucchini in the oil and seasonings for 15-30 minutes before roasting.
