Ingredients
Scale
- 8 medium-large peaches, peeled, pitted and sliced (about 5–6 cups)
- 1 tablespoon fresh lemon juice
- 2–4 tablespoons maple sugar or coconut sugar, adjust sweetness to preference
- 1/2 teaspoon cinnamon
- 1 tablespoon arrowroot flour or tapioca flour
- pinch sea salt
- 1 1/2 cups blanched almond flour
- 1/2 cup arrowroot flour or tapioca flour
- 1/3 cup + 1 tablespoon maple sugar or coconut sugar
- 1/4 teaspoon sea salt
- 1 teaspoon ground cinnamon
- 1 1/2 teaspoons aluminum free baking powder
- 1/3 cup + 2 tablespoons refined coconut oil, melted and cooled to almost room temp
- 1/3 cup unsweetened almond milk or preferred dairy free milk
- 1 teaspoon pure vanilla extract
Instructions
- Preheat the oven to 375°F and lightly grease a 9" square or round or 11" oval baking dish with coconut oil.
- Toss the sliced peaches with lemon juice, maple sugar, cinnamon, arrowroot flour, and sea salt until well coated, then spread the mixture evenly in the baking dish.
- For the topping, mix together blanched almond flour, arrowroot flour, coconut sugar, sea salt, ground cinnamon, baking powder, coconut oil, almond milk, and vanilla extract in a large bowl until a smooth batter forms. Let the batter rest for 5 minutes.
- Scoop the batter over the peaches in 4 sections, flattening each scoop gently; do not spread it over the peaches completely.
- Bake for about 40 minutes until the filling is bubbly and the top is golden brown and set.
- Cool at room temperature for 20-30 minutes to allow the filling to set, then serve warm or at room temperature, optionally with coconut vanilla ice cream or whipped cream.
Notes
Adjust the sweetness of the peaches to your liking by using more or less maple sugar.
Make sure to let the cobbler cool before serving to achieve the best texture.
For a twist, you can add a dash of nutmeg along with cinnamon in the topping.
