This French Onion Meatloaf features irresistible flavors from caramelized onions and melted cheese, making it a quick and satisfying meal for any occasion.

- 3 tablespoons butter
- 2 large onions
- 2 pounds ground beef
- 2 eggs
- 1/2 cup breadcrumbs
- 1 tablespoon worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon flour
- 1 cup beef broth
- 1/2 cup swiss cheese shredded
- 4–5 slices provolone cheese
Instructions
- Preheat the oven to 350°F (175°C).
- Melt 2 tablespoons of butter in a skillet over medium heat. Add sliced onions and cook for 20-25 minutes until golden and caramelized. Set half aside for the sauce.
- In a large bowl, combine ground beef, eggs, breadcrumbs, Worcestershire sauce, thyme, salt, pepper, and remaining caramelized onions. Mix gently until combined.
- Shape the mixture into a loaf and place in a baking dish. Bake for 45 minutes.
- For the sauce, return reserved onions to the skillet, add remaining butter, and let melt. Stir in flour and cook for 1 minute. Gradually whisk in broth and simmer until thickened.
- Remove the meatloaf from oven, top with shredded Swiss cheese and provolone slices. Broil for 3-5 minutes until cheese is melted and golden.
- Let rest for 5-10 minutes before slicing. Serve with onion sauce on top.
Notes
For extra richness, use a combination of ground beef and ground pork.
Serving it with mashed potatoes makes a comforting meal.
Allow the meatloaf to rest easily for better slicing.
