- 6 large carrots, (about 1 pound)
- 1/2 cup finely chopped pistachios
- 2 tablespoons chopped dill
- 2 tablespoons chopped parsley
- 1 green onion, (thinly sliced)
- Extra herbs and chopped pistachios, (for garnish)
- 1/3 cup olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon apple cider vinegar, (or champagne vinegar)
- 2 teaspoons honey
- 1 teaspoon Dijon mustard
- 1 small clove garlic, (grated)
- Kosher salt and black pepper, (to taste)
Instructions
- Wash and peel the carrots, then shave each carrot lengthwise into long, thin ribbons using a vegetable peeler. Place the ribbons in a large bowl.
- In a small bowl or jar, whisk together olive oil, fresh lemon juice, apple cider (or champagne) vinegar, honey, Dijon mustard, and grated garlic. Season with kosher salt and black pepper to taste and whisk until smooth.
- Pour the dressing over the carrot ribbons and toss gently to coat them evenly.
- Add the chopped pistachios, dill, parsley, and green onion to the carrot ribbons and toss again until everything is evenly distributed.
- Transfer the salad to a serving platter, and garnish with extra herbs and chopped pistachios. You can serve immediately or chill for 15–30 minutes to enhance the flavors.
Notes
For added flavor, let the salad chill before serving to allow the dressing to meld with the vegetables.
You can substitute any nuts or herbs based on your preference.
Feel free to add other vegetables like cucumbers or bell peppers for extra crunch.
