- ½ teaspoon olive oil
- ½ cup chopped walnuts
- 1 teaspoon salt
- 1 cup cream
- 4 ounces diced gorgonzola cheese
- ¼ teaspoon fresh black pepper
- ¼ cup grated Parmesan cheese (optional)
- 2 tablespoons fresh parsley (optional)
Instructions
- Cook the pasta until al dente according to package directions and reserve ½ cup of the cooking water.
- Warm olive oil in a skillet over medium heat, add chopped walnuts, sprinkle with salt, and cook until golden brown, about 4 minutes. Remove and set aside.
- In the same skillet, over medium-high heat, add cream, gorgonzola, and black pepper. Simmer gently and stir until the cheese melts, about 3-4 minutes, then turn off the heat.
- Drain the pasta and add it to the skillet. Toss well to coat in the creamy sauce, adding reserved pasta water if needed for consistency. Toss in half of the walnuts and adjust seasoning with salt and pepper as desired.
- Serve immediately with a drizzle of extra virgin olive oil and garnish with remaining walnuts, parsley, and freshly grated parmesan if desired.
Notes
For a lighter version, you can use reduced-fat cream.
