Description

Celebrate with these delightful Graduation Cap & Diploma Sugar Cookies! With a simple prep and flavor profile featuring vanilla and almond, they are perfect for festivities. Made with all-purpose flour, sugar, and decorated white chocolate, they’re sure to impress at any graduation party!


Ingredients

  • 2 cups all purpose flour (plus more if needed)
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup butter (softened slightly)
  • 3/4 cups sugar
  • 1 large egg
  • 3/4 teaspoons pure vanilla extract
  • 1/2 teaspoon almond extract
  • 16 ounces white chocolate
  • 1/3 cup light corn syrup (plus more if needed)
  • food coloring (flesh tone and other color for your grad caps)

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. In a mixing bowl, combine flour, salt, and baking powder, then set aside.
  3. Cream the softened butter and sugar until light and fluffy.
  4. Mix in the egg, vanilla extract, and almond extract.
  5. Gradually stir in the dry ingredients until just combined.
  6. If the dough is too sticky, add a small amount of flour.
  7. Roll out the cookie dough on a floured surface to 1/8 inch thickness.
  8. Cut twelve 3-inch circles from the dough.
  9. Use a diamond-shaped cookie cutter to create twelve grad caps, and cut notches in each circle to insert the caps.
  10. Press the seams together gently to secure the cap to the circle.
  11. Bake cookies in the preheated oven for 10-14 minutes until the edges are set and tops dry.
  12. Let cookies cool completely before decorating.
  13. For the modeling chocolate, reserve 2 tablespoons of white chocolate for tassels and color with food coloring.
  14. Roll the flesh tone modeling chocolate to 1/16 inch thickness and cut out 3-inch circles, then cut diamond shapes from the blue modeling chocolate.
  15. Brush a light coat of corn syrup on a cookie and carefully layer the circle and diamond, pressing seams.
  16. Create tassels by rolling modeling chocolate into tubes and using a clay extruder to shape strands. Attach these to the caps using corn syrup.

Notes

For best results, ensure the butter is softened but not melted.
Allow cookies to cool completely to prevent decorations from melting.
Experiment with various colors for the modeling chocolate to match different graduation themes.
