- 1/4 cup olive oil
- 1/3 cup fresh lemon juice
- 2 tablespoons lemon zest (about the zest of two lemons)
- 1 small shallot diced fine
- 4 garlic cloves
- 1 tablespoon dijon mustard
- 1 tablespoon dried oregano
- 1 1/2 teaspoons kosher salt
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- 1/4 teaspoon black pepper
- 4 pounds bone-in skin on chicken thighs
Instructions
- In a large bowl, mix together the marinade ingredients: olive oil, fresh lemon juice, lemon zest, diced shallot, minced garlic, dijon mustard, oregano, kosher salt, dried thyme, paprika, and black pepper.
- Add the chicken thighs to the marinade and ensure they are well coated. Cover the bowl and refrigerate for a minimum of 30 minutes, or up to 24 hours for better flavor.
- Preheat your oven to 400 degrees Fahrenheit.
- Place the marinated chicken in a baking dish. Pour the remaining marinade over the chicken.
- Cover the dish with foil and bake for 45 to 55 minutes, until the chicken reaches an internal temperature of 165 degrees Fahrenheit.
- Once cooked, remove the foil and switch on the broiler for 2 to 3 minutes to crisp the skin, watching closely to prevent burning.
Notes
For extra flavor, marinate the chicken overnight.
