Description

These Grilled Chicken Sandwiches feature juicy chicken breasts, creamy garlic aioli, and fresh toppings. Perfect for quick summer lunches, this flavor-packed dish is easy to make and sure to please a crowd!


Ingredients

  • 4 boneless skinless chicken breasts (about 68 oz each)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 ½ teaspoons salt
  • Black pepper to taste, optional
  • Avocado oil or other high-heat oil
  • 1 cup mayonnaise
  • 3 cloves garlic, minced
  • 1 tablespoon dijon mustard
  • 1 tablespoon lemon juice
  • 4 brioche buns or ciabatta rolls
  • 2 avocados, sliced
  • 1 large tomato, sliced
  • lettuce leaves or arugula
  • 8 slices crispy bacon
  • ½ red onion, thinly sliced
  • Dill pickles
  • hot honey for drizzling

Instructions

  1. Make the garlic aioli by mixing mayonnaise, minced garlic, dijon mustard, and lemon juice in a small bowl. Cover and set aside.
  2. Pat the chicken dry with paper towels. Preheat the grill to medium-high heat. In a bowl, mix garlic powder, paprika, salt, and black pepper. Rub the chicken with avocado oil and season it evenly on both sides.
  3. Grill the chicken for 4-7 minutes on each side until cooked through (internal temperature should reach 165°F). Allow to rest before assembling the sandwiches.
  4. Slice the brioche buns and lightly toast them on the grill while the chicken rests.
  5. Spread garlic aioli on the bottom half of each toasted bun, then layer a grilled chicken breast atop each bun.
  6. Add avocado slices, tomato slices, a few lettuce leaves, and two slices of crispy bacon per sandwich. Optionally, add dill pickles.
  7. Drizzle hot honey over the toppings, adjusting for spice preference.
  8. Finish by placing the top bun on each sandwich and serve immediately.

Notes

For a spicier version, incorporate sriracha into the aioli.
Feel free to use different toppings like pickles or arugula based on your preference.
Leftover grilled chicken can be stored in an airtight container in the fridge for up to 3 days.
