Description

This grilled corn elote style is a delightful dish featuring juicy corn slathered in creamy sauce, topped with cheese and spices. Perfect for summer gatherings!


Ingredients

Scale
  • 4 ears corn
  • 3 tablespoons mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup cilantro, freshly chopped
  • 1/2 cup Parmesan cheese, freshly grated
  • 1/4 cup cotija cheese
  • 1 lime, juiced
  • chili powder, to taste
  • 2 limes cut into wedges, for garnish

Instructions

  1. Remove the husks of the corn, keeping the core attached.
  2. Grill the corn on a hot grill or cast iron pan until charred on all sides.
  3. In a small bowl, mix mayonnaise, sour cream, and cilantro together.
  4. Once grilled, remove the corn and brush it with the mayonnaise mixture.
  5. Squeeze lime juice over the corn, then generously sprinkle with Parmesan and cotija cheese. Add chili powder to taste and serve.

Notes

For extra flavor, let the corn sit in the dressing for a few minutes before serving.
Feel free to adjust the chili powder based on your spice preference.
Garnish with additional lime wedges for an enhanced presentation.
