- 1/3 cup basil pesto
- 1 tablespoon balsamic vinegar
- Chopped basil for garnish
Instructions
- Heat a 12-inch skillet over medium-high heat and drizzle in a bit of olive oil.
- Add the ground beef to the skillet, crumbling it as it cooks for 2-3 minutes before adding shallots and garlic.
- Season the beef mixture with salt, pepper, and Italian seasoning. Cook for another minute until the shallots soften and the garlic becomes fragrant.
- Push the beef mixture to one side of the skillet. Add in the diced zucchini and corn, seasoning them with a touch of salt and pepper.
- Continue cooking until the beef is cooked through and the zucchini is tender. Stir in the pesto and balsamic vinegar, mixing everything together.
- Taste and adjust seasoning if necessary, then top with chopped basil before serving.
Notes
For extra flavor, use grass-fed ground beef.
