Description

This Ground Beef and Zucchini Skillet is a delightful mix of flavors and textures, bringing together succulent ground beef, tender zucchini, and aromatic pesto for a quick, easy dinner that’s both healthy and comforting.


Ingredients

  • 1 pound lean ground beef
  • 1/3 cup diced shallot
  • 2 cloves garlic, grated or minced
  • 1 teaspoon Italian seasoning
  • 2 small zucchini, diced
  • 1 cup corn, frozen or fresh
  • 1/3 cup basil pesto
  • 1 tablespoon balsamic vinegar
  • Chopped basil for garnish

Instructions

  1. Heat a 12-inch skillet over medium-high heat and drizzle in a bit of olive oil.
  2. Add the ground beef to the skillet, crumbling it as it cooks for 2-3 minutes before adding shallots and garlic.
  3. Season the beef mixture with salt, pepper, and Italian seasoning. Cook for another minute until the shallots soften and the garlic becomes fragrant.
  4. Push the beef mixture to one side of the skillet. Add in the diced zucchini and corn, seasoning them with a touch of salt and pepper.
  5. Continue cooking until the beef is cooked through and the zucchini is tender. Stir in the pesto and balsamic vinegar, mixing everything together.
  6. Taste and adjust seasoning if necessary, then top with chopped basil before serving.

Notes

For extra flavor, use grass-fed ground beef.
Feel free to add other vegetables like bell peppers or carrots for more color and nutrients.
