Description

  • 2 cups diced granny smith apples, peeled, divided
  • ¼ cup avocado oil
  • ½ cup packed light brown sugar
  • 1 cup cottage cheese, 4%, blended smooth
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • ¼ cup powdered sugar
  • 1 tablespoon milk

Instructions

  1. Preheat your oven to 425°F and prepare a muffin tin with 6 paper liners, placing them apart for optimal baking.
  2. In a bowl, mix flour, baking powder, salt, cinnamon, and nutmeg until blended well, about 30 seconds.
  3. Add 1.5 cups diced apples to the flour mixture, tossing to coat them in flour to prevent sinking during baking.
  4. In a separate bowl, whisk together the avocado oil, brown sugar, cottage cheese, eggs, and vanilla until smooth.
  5. Pour wet ingredients into the dry mix and gently fold until combined, about 15-20 strokes, avoiding overmixing.
  6. Fill the muffin liners with the batter, nearly to the top for a tall dome effect.
  7. Create a topping by mixing brown sugar and cinnamon, then sprinkle on top of the filled muffins, adding remaining apple pieces.
  8. Bake at 425°F for 5 minutes, then reduce to 350°F for an additional 13-18 minutes until done.
  9. Cool the muffins for a few minutes in the tin before transferring to a wire rack to cool completely.
  10. For an optional glaze, whisk powdered sugar with milk and drizzle over cooled muffins.
