Description

Ingredients

  • 1 cup unsweetened cinnamon applesauce
  • 3/4 cup milk
  • 2 tablespoons maple syrup
  • 2 teaspoons vanilla extract
  • 2 1/2 cups rolled oats (250 grams)
  • 1 1/2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups diced apple (235 grams)

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and line a muffin tin with silicone muffin liners or grease a nonstick muffin tin.
  2. In a large bowl, combine the wet ingredients: applesauce, milk, maple syrup, and vanilla extract. Mix well.
  3. Add the dry ingredients: rolled oats, cinnamon, nutmeg, baking powder, and salt to the wet mixture. Stir until well combined, then fold in the diced apples.
  4. Using a large cookie scoop, fill 10 muffin tins with the batter. The batter will be wet; shape the muffins as needed.
  5. Bake for 25-28 minutes or until golden brown on top. Allow to cool, sprinkle with cinnamon if desired, and enjoy!

Notes
