- 4 lbs medium or large yellow onions
- 6 tablespoons unsalted butter
- 2 tablespoons olive oil
- 2 tablespoons packed dark brown sugar

Instructions
- Cut the onions in half from root to tip, remove the root with a paring knife, and trim the tips.
- Slice each onion half lengthwise into ¼-inch thick half moons and place in a large bowl.
- In a large pot over medium heat, melt the butter with the olive oil.
- Add handfuls of onions to the pot, stirring often until soft and translucent, about 2 minutes per batch.
- Reduce the heat to medium-low, cooking the onions while stirring occasionally for about 45-50 minutes, until they are deeply caramelized and dark brown.
- Season with brown sugar and salt, stirring for another 5-7 minutes until well mixed, then remove from heat and let cool.
- Store the cooled onions in an airtight container in the fridge for up to one week.
