Description

These lemon bars are a delightful blend of tangy lemon flavor and a buttery crust. Simple to prepare, they are a perfect dessert or treat for gatherings, promising a burst of sunshine in every bite!


Ingredients

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 4 large eggs
  • 2 tbsp lemon zest
  • 1/2 cup fresh lemon juice
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 350 degrees.
  2. Line a 9×13 pan with parchment paper.
  3. In a medium bowl, mix the butter, sugar, and vanilla together.
  4. Add the flour and stir until combined.
  5. Press the mixture firmly into the prepared pan and bake for 15-20 minutes or until the edges are light brown.
  6. In a large bowl, whisk together the sugar and flour to remove lumps.
  7. Add the eggs, lemon zest, and lemon juice, whisking until everything is combined.
  8. Pour the filling over the warm crust and bake for 30-35 minutes until the center is set and doesn't jiggle.
  9. Remove from the oven and let cool completely at room temperature, then refrigerate.
  10. Dust with powdered sugar before serving.

Notes

Let the bars cool completely for the best texture.
For a stronger lemon flavor, add more zest and juice.
These bars can be made ahead of time and stored in the refrigerator.
