- 1 cup unsalted butter
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 4 large eggs
- 2 tbsp lemon zest
- 1/2 cup fresh lemon juice
- 1/4 cup powdered sugar
Instructions
- Preheat the oven to 350 degrees.
- Line a 9×13 pan with parchment paper.
- In a medium bowl, mix the butter, sugar, and vanilla together.
- Add the flour and stir until combined.
- Press the mixture firmly into the prepared pan and bake for 15-20 minutes or until the edges are light brown.
- In a large bowl, whisk together the sugar and flour to remove lumps.
- Add the eggs, lemon zest, and lemon juice, whisking until everything is combined.
- Pour the filling over the warm crust and bake for 30-35 minutes until the center is set and doesn't jiggle.
- Remove from the oven and let cool completely at room temperature, then refrigerate.
- Dust with powdered sugar before serving.

For a stronger lemon flavor, add more zest and juice.
