- zest of one lemon
- juice of one lemon
- 1/2 teaspoon kosher salt
- dash freshly ground black pepper
- 1/3 cup grated parmesan cheese
Instructions
- Boil a large pot of water and add the salt. Cook the spaghetti according to the package instructions, reserving 1 cup of pasta water before draining.
- In a large skillet over medium heat, melt the butter. Add the minced garlic and lemon zest, cooking until fragrant (about 1 minute). Incorporate the lemon juice, 1/2 cup reserved pasta water, salt, and pepper, whisking to combine.
- Add the drained spaghetti to the skillet, tossing to mix well. Stir in the parmesan cheese, adding additional reserved pasta water if needed to achieve a smooth sauce. Adjust seasoning with salt and pepper to taste.
