- 1 pound grape or cherry tomatoes, halved
- 3 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 tablespoon balsamic vinegar
- 1 to 2 cloves garlic, grated
- 1 tablespoon finely chopped basil
- 1/2 tablespoon finely chopped fresh parsley
- 1 teaspoon finely chopped fresh thyme
- dash of crushed red pepper flakes
- kosher salt, to taste
Instructions
- In a medium bowl, combine the halved tomatoes, olive oil, red wine vinegar, balsamic vinegar, grated garlic, chopped basil, parsley, thyme, crushed red pepper flakes, and kosher salt. Stir until well mixed.
- Cover the bowl tightly with plastic wrap and let it sit at room temperature for at least 30 minutes; ideally, 1 to 2 hours for maximum flavor. Stir the tomatoes occasionally as they marinate.
- If marinating for more than 2 hours, refrigerate the bowl to keep the ingredients fresh.
