- 1 deep dish pie shell (16 oz)
- 1 cup diced chicken
- 2 cups fresh spinach
- 1/4 cup sun dried tomatoes, diced
- 2 green onions, thinly sliced
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
- 6 large eggs
- 1/2 cup heavy cream
- 1/2 cup milk
- 1/4 tsp salt
- 1/4 tsp ground black pepper
Instructions
- Preheat the oven to 400˚F. Line the pie crust with parchment paper and fill it with dried beans. Bake for 12-15 minutes until golden brown, then remove and let cool to room temperature. Reduce oven temperature to 350˚F.
- In a medium bowl, whisk together the eggs, heavy cream, milk, salt, and pepper until well combined.
- Chop the spinach and place it in the bottom of the cooled pie crust. Layer the diced chicken, sun dried tomatoes, green onions, and cheeses on top of the spinach.
- Pour the egg mixture over the layered fillings in the pie shell. Place the quiche on a baking sheet for easier handling and bake for 45-55 minutes, until the center is just set.
- Allow the quiche to sit for 20 minutes before serving warm or at room temperature. Enjoy!

Pre-baking the pie crust is essential to avoid a soggy bottom.
