Ingredients

Scale
  • ¾ cup (178.5 g) heavy whipping cream
  • ½ cup (810 whole) sun-dried tomatoes, soaked in hot water, drained, & chopped
  • 1 teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon crushed red pepper flakes
  • ⅓ cup (33 g) grated parmesan cheese
  • 3 cups rotisserie chicken, shredded
  • 1 package (12 count) king’s hawaiian sweet rolls
  • ½ cup (15 g) fresh baby spinach
  • 1 cup (113 g) monterey jack cheese, shredded
  • ¼ cup (½ stick / 57 g) unsalted butter, melted
  • 1 teaspoon garlic, minced
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the oven to 350°F and coat a 7×11-inch baking dish with nonstick cooking spray.
  2. In a large bowl, combine heavy whipping cream, sun-dried tomatoes, garlic powder, salt, black pepper, crushed red pepper flakes, parmesan cheese, and shredded rotisserie chicken, mixing until well combined.
  3. Tear the sweet rolls apart, then place the bottom halves in the prepared baking dish.
  4. Layer fresh baby spinach and shredded monterey jack cheese over the rolls, then pour the chicken mixture on top.
  5. Place the top halves of the sweet rolls back on, and brush them with melted butter mixed with minced garlic and chopped parsley.
  6. Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes until the tops are golden and crispy.

Notes

For extra flavor, consider adding a splash of lemon juice to the chicken mixture.
Feel free to substitute with your favorite shredded cheese for a different flavor profile.
These sliders can easily be made ahead and frozen for a quick meal later.
