- 2 cups veggies, tomatoes, zucchini, bell pepper, red onion, mushrooms
- Pinch salt
- 12 eggs
- 1 cup cottage cheese
- 10 burrito-sized tortillas
- 1 cup cheddar cheese, shredded
Instructions
- Cook the meat of your choice in a medium skillet over medium heat until fully cooked, then transfer to a bowl.
- Add your selected vegetables plus a pinch of salt to the same skillet and sauté for 3-5 minutes until soft.
- In a bowl, whisk together the eggs and cottage cheese, adding a bit of salt and pepper. Pour this mix into the skillet with the veggies and scramble until cooked through.
- On a flat surface, lay out a tortilla, then add ¾ cup of the egg mixture, followed by 2 tablespoons of cooked meat and 2 tablespoons of cheese.
- Fold in the sides of the tortilla and roll tightly to form a burrito. Continue until all fillings are used up.
- For storage, wrap each burrito in foil and freeze on a baking sheet to prevent sticking. Once frozen, place in a plastic bag or freezer container for up to 2 months.
- Alternatively, you can refrigerate the wrapped burritos for up to 1 week.
- To reheat, microwave until hot or bake in the oven at 375°F for 15-20 minutes.
