Ingredients
Scale
- 16 ounces frozen mixed berries, thawed
- ⅓ cup water
- 2 tablespoons cornstarch
- 2 tablespoons water
- ⅔ cup granulated sugar
- 1 teaspoon lemon juice
- 10 tablespoons Challenge Unsalted Butter
- 1 ⅔ cups all-purpose flour
- ½ teaspoon salt
- 2–3 tablespoons ice cold water
- 4 tablespoons Challenge Unsalted Butter
- ¼ cup packed brown sugar
- ½ cup all-purpose flour
Instructions
- Drain the berries thoroughly and place them in a medium saucepan with 1/3 cup of water.
- Heat over medium-low, stirring occasionally, until some berries break down, about 3-5 minutes.
- In a small bowl, mix the cornstarch with 2 tablespoons of water until smooth.
- Add the granulated sugar and lemon juice to the berry mixture.
- Stir the cornstarch slurry to ensure it's not clumped, then add it to the berry mixture.
- Stir constantly until the mixture thickens and bubbles, about 1-3 minutes.
- Remove from heat, transfer to a bowl or jar, and cool completely before refrigerating for at least 2 hours.
Notes
For extra flavor, consider adding a pinch of cinnamon to the berry mixture.
Ensure the gel mixture is fully cooled before filling the crust to prevent sogginess.
These mini pies can be served warm or cold, topped with whipped cream.
