- 1 (3.6-ounce box) watermelon-flavored Jell-O
- ½ cup boiling water
- ½ cup cold water
- 1 (8-ounce tub) Cool Whip, thawed
- 1½ cups diced seedless watermelon, blotted dry
- 1 (9-inch) graham cracker pie crust, store-bought or homemade
- Watermelon slices and mint leaves, for decoration (optional)
Instructions
- In a medium bowl, dissolve the watermelon Jell-O in ½ cup of boiling water, stirring for a minute or two until fully dissolved.
- Add ½ cup of cold water and stir. Allow to cool on the counter for about 10 to 15 minutes without letting it set.
- Once cooled slightly, gently fold in the Cool Whip until the mixture is smooth, then fold in the diced watermelon.
- Spoon the filling into the graham cracker crust, smoothing the top.
- Refrigerate for at least 4 hours until set and firm.
- Slice and serve chilled, optionally garnishing with Cool Whip, fresh watermelon cubes, or mint leaves.
- Store covered in the fridge for up to 3 days; avoid freezing to maintain texture.
Notes
You can customize this pie by adding other fruit varieties for a twist.
For a firmer pie, refrigerating for longer than 4 hours may be beneficial.
