- 2 tablespoons olive oil
- 1½ pounds chicken breast
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon garlic powder
- 16 ounces orzo
- 4 cups chicken broth
- 1½ cup heavy cream
- 4 ounces cream cheese
- 1 teaspoon salt
- ¼ cup parmesan cheese, plus more for garnish
- 3 cloves garlic, minced
- 1 can quartered artichoke hearts, (14 ounce) drained
- 8 ounces fresh spinach
Instructions
- Cut the chicken into 1-inch cubes and season with salt, pepper, and garlic powder.
- In a large skillet, heat olive oil over medium-high heat. Once hot, spread the chicken in a single layer and cook for 3-4 minutes. Stir and cook for another 3-4 minutes.
- Add the orzo, chicken broth, and heavy cream to the skillet. Stir and bring to a simmer, cooking for about 10-12 minutes or until orzo is tender, stirring occasionally.
- Stir in salt, cream cheese, parmesan cheese, artichoke hearts, and fresh spinach. Cook until the spinach is wilted and cheese is fully mixed in.
- Serve garnished with additional parmesan and fresh cracked pepper.
Notes
Feel free to substitute the chicken with shrimp for a seafood twist.
Add more vegetables like bell peppers or onions for extra flavor and nutrients.
