- 2 boneless skinless chicken breasts, cut in half lengthwise
- ¾ cup grated parmesan cheese, divided
- ½ cup shredded provolone cheese
- 6 tablespoons unsalted butter, melted and divided
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon salt, or to taste
- ½ teaspoon pepper, or to taste
- ½ cup panko breadcrumbs
Instructions
- Preheat a grill pan over medium-high heat.
- In a small mixing bowl, combine 4 tablespoons of melted butter, garlic powder, onion powder, salt, and pepper. Brush this mixture over each chicken breast.
- Place the chicken on the grill pan and cook for 3-4 minutes before flipping it over.
- In a medium bowl, mix together ½ cup of Parmesan cheese and provolone cheese, then set aside.
- Top the chicken with the cheese mixture, cooking for an additional 3-4 minutes until the internal temperature reaches 165°F.
- Remove the chicken from the grill pan and place it on a foil-lined baking sheet.
- Preheat the oven’s broiler on high.
- In another bowl, mix panko breadcrumbs with the remaining ¼ cup of Parmesan cheese and 2 tablespoons of melted butter. Sprinkle this mixture over each chicken breast.
- Place the baking sheet under the broiler for 1-2 minutes, until the breadcrumbs are golden and crispy, watching carefully to avoid burning.
- Take the chicken out of the broiler and let it rest for 5 minutes before serving.
Notes
For extra flavor, add Italian herbs to the breadcrumb mixture.
