Description

Ingredients

  • 2 boneless skinless chicken breasts, cut in half lengthwise
  • ¾ cup grated parmesan cheese, divided
  • ½ cup shredded provolone cheese
  • 6 tablespoons unsalted butter, melted and divided
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt, or to taste
  • ½ teaspoon pepper, or to taste
  • ½ cup panko breadcrumbs

Instructions

  1. Preheat a grill pan over medium-high heat.
  2. In a small mixing bowl, combine 4 tablespoons of melted butter, garlic powder, onion powder, salt, and pepper. Brush this mixture over each chicken breast.
  3. Place the chicken on the grill pan and cook for 3-4 minutes before flipping it over.
  4. In a medium bowl, mix together ½ cup of Parmesan cheese and provolone cheese, then set aside.
  5. Top the chicken with the cheese mixture, cooking for an additional 3-4 minutes until the internal temperature reaches 165°F.
  6. Remove the chicken from the grill pan and place it on a foil-lined baking sheet.
  7. Preheat the oven’s broiler on high.
  8. In another bowl, mix panko breadcrumbs with the remaining ¼ cup of Parmesan cheese and 2 tablespoons of melted butter. Sprinkle this mixture over each chicken breast.
  9. Place the baking sheet under the broiler for 1-2 minutes, until the breadcrumbs are golden and crispy, watching carefully to avoid burning.
  10. Take the chicken out of the broiler and let it rest for 5 minutes before serving.

Notes

For extra flavor, add Italian herbs to the breadcrumb mixture.
Serve with a side salad for a complete meal.
Ensure internal chicken temperature reaches 165°F for safety.
