Description

Ingredients

  • 4 cups sliced peaches
  • 1 1/2 cups blueberries
  • 1 tablespoon fresh lemon juice
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1 teaspoon vanilla extract
  • 6 tablespoons unsalted butter
  • 1 cup white whole wheat flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 3/4 cup milk

Instructions

  1. In a saucepan, combine peaches, blueberries, granulated sugar, lemon juice, ground cinnamon, ground ginger, and a pinch of salt. Cook on medium heat until the sugar dissolves, about 2-3 minutes, stirring often.
  2. Remove the pan from heat and stir in the vanilla. Set aside the mixture.
  3. Cut the butter into pieces and place it in a 9×13 baking dish. Place the dish in the oven to melt the butter as the oven preheats to 350°F.
  4. In a mixing bowl, combine the white whole wheat flour, granulated sugar, baking powder, salt, ground cinnamon, and ground ginger. Gradually add the milk, stirring until just combined.
  5. Remove the baking dish from the oven. Pour the batter over the melted butter and smooth it out evenly.
  6. Spoon the fruit mixture and its juices over the batter. If desired, sprinkle turbinado sugar on top before returning the dish to the oven.
  7. Bake at 350°F for 35-40 minutes or until the top is golden brown and crisp. Allow to cool for 5 minutes before serving. Best enjoyed warm, preferably with vanilla ice cream.

Notes

You can use frozen blueberries if fresh are not available—just ensure they’re thawed.
For added texture, consider sprinkling oats over the fruit before baking.
This cobbler can be made ahead and reheated; it tastes great the next day!
