Description

These Peach Cobbler Cookies boast a delightful flavor with their combination of fresh peaches and warming spices. They are simple to prepare and perfect for satisfying your sweet tooth or serving guests with a homemade treat.


Ingredients

  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1 tsp cornstarch
  • 1 tsp salt
  • 1 cup unsalted butter, room temperature
  • 1 cup brown sugar, packed light brown sugar
  • 1/2 cup white granulated sugar
  • 1 tsp pure vanilla extract
  • 1 tsp honey
  • 2 large eggs, room temperature
  • 2 tbsp unsalted butter, melted
  • 1/2 cup white granulated sugar
  • 2 tsp ground cinnamon
  • 4 peaches, 1 lb cubed
  • 2/3 cup brown sugar, light brown sugar packed
  • 1/2 tsp ground cinnamon
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch

Instructions

  1. In a medium bowl, mix flour, baking soda, cinnamon, cornstarch, and salt together. Set aside.
  2. Using a mixer in a large bowl, beat the butter, brown sugar, and sugar on high speed for 2 minutes until pale and fluffy.
  3. Add the eggs, vanilla, and honey. Mix on medium speed until combined. Add the dry ingredients and mix on low until just combined.
  4. Preheat the oven to 350℉. Line two cookie sheets with parchment paper. Let the cookie dough rest for 10 minutes to help prevent spreading.
  5. Use a large cookie scoop (2 oz) to scoop cookie dough balls and place 6 per cookie sheet.
  6. Bake for 12-14 minutes until the edges are lightly golden. Let sit for 2 minutes, then press a teaspoon in the center of each cookie to create an indent.
  7. Place cookies on a cookie sheet to cool completely.

Notes

For an extra flavor boost, add a pinch of nutmeg to the dry ingredients.
Ensure your butter is at room temperature for better incorporation.
Using ripe peaches enhances the sweetness and flavor of the cookies.
