- 1 tablespoon chia seeds
- 1 cup milk
- 1.5 teaspoons vanilla extract
- 2 tablespoons maple syrup
- 1 cup chopped peaches
- ½ cup rolled oats
- 1 tablespoon maple syrup
- 1 teaspoon coconut oil
- ¼ teaspoon ground cinnamon
- Plain Greek yogurt
Instructions
- Preheat the oven to 375ºF.
- Mix the oats, maple syrup, coconut oil, and cinnamon in a bowl until a crumble forms. Transfer it to a small baking sheet and bake until golden brown, about 7-10 minutes, tossing halfway through.
- Combine all oatmeal ingredients in a small saucepan and heat on medium/high until boiling.
- Reduce heat to low and stir continuously for 3-5 minutes until thickened.
- Serve topped with the crumble and a dollop of Greek yogurt.
Notes
For extra sweetness, adjust the amount of maple syrup to taste.
Fresh or frozen peaches can be used interchangeably for convenience.
