Description

Ingredients

  • 4 cups fresh peach slices, peeled
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 pinch salt
  • 6 tbsp unsalted butter, melted
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup milk
  • 2 tbsp brown sugar
  • 2 tsp cinnamon

Instructions

  1. Preheat your oven to 350°F and spray a 9×13 baking dish with nonstick spray.
  2. In a medium saucepan, combine the sliced peaches, granulated sugar, brown sugar, and a pinch of salt. Cook over medium heat for about 3-4 minutes until the sugar melts and the mix is juicy.
  3. Pour the melted butter into the bottom of the prepared baking dish without stirring it in.
  4. In a bowl, whisk the flour, 1 cup sugar, baking powder, salt, and milk until smooth. Pour this over the butter in the pan, but do not stir.
  5. Carefully place the peach mixture evenly over the batter, allowing some juice to spill over. Sprinkle with brown sugar and cinnamon.
  6. Bake for 38-42 minutes or until the top is golden and bubbling around the edges.
  7. Let the cobbler cool slightly before serving warm, ideally with a scoop of vanilla ice cream.

Notes

For added flavor, try using a mix of ripe and slightly underripe peaches.
Make sure to let the cobbler cool for a few minutes before serving; it will firm up a bit as it cools.
Serves well with whipped cream or a vanilla sauce if ice cream isn’t available.
