- 4 cups fresh peach slices, peeled
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 pinch salt
- 6 tbsp unsalted butter, melted
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 3/4 cup milk
- 2 tbsp brown sugar
- 2 tsp cinnamon
Instructions
- Preheat your oven to 350°F and spray a 9×13 baking dish with nonstick spray.
- In a medium saucepan, combine the sliced peaches, granulated sugar, brown sugar, and a pinch of salt. Cook over medium heat for about 3-4 minutes until the sugar melts and the mix is juicy.
- Pour the melted butter into the bottom of the prepared baking dish without stirring it in.
- In a bowl, whisk the flour, 1 cup sugar, baking powder, salt, and milk until smooth. Pour this over the butter in the pan, but do not stir.
- Carefully place the peach mixture evenly over the batter, allowing some juice to spill over. Sprinkle with brown sugar and cinnamon.
- Bake for 38-42 minutes or until the top is golden and bubbling around the edges.
- Let the cobbler cool slightly before serving warm, ideally with a scoop of vanilla ice cream.
Notes
For added flavor, try using a mix of ripe and slightly underripe peaches.
Make sure to let the cobbler cool for a few minutes before serving; it will firm up a bit as it cools.
Serves well with whipped cream or a vanilla sauce if ice cream isn’t available.
