Description

Ingredients

  • 3 pounds ripe peaches peeled, pitted and cut into 8 pieces
  • 2/3 cup white granulated sugar
  • 2 tablespoons corn starch
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 3/4 cup dark brown sugar packed
  • 3/4 cup white all-purpose flour
  • 2/3 cup old fashioned rolled oats
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 stick salted butter cut into very small pieces

Instructions

  1. Preheat the oven to 350 degrees.
  2. Grease a 9-inch baking dish with non-stick spray and set aside.
  3. In a large bowl, toss the sliced peaches with the sugar until fully coated, then set aside.
  4. In a medium bowl, combine the brown sugar, flour, rolled oats, cinnamon, and nutmeg.
  5. Add the diced butter to the flour mixture. Use a pastry blender or fork to mix until you have coarse crumbs.
  6. To the bowl of peaches, add the vanilla, cornstarch, cinnamon, and salt. Toss to coat the peach slices evenly.
  7. Pour the peaches into the bottom of the prepared baking dish.
  8. Spread the crumb topping over the peaches evenly.
  9. Bake for 45-50 minutes, until the topping is golden brown and juices bubble around the edges.
  10. Remove from the oven and let rest for 15 minutes before serving.
  11. Optionally, serve with vanilla ice cream and a sprig of mint.

Notes

This dish can be served warm or at room temperature.
For added flavor, consider mixing in other fruits such as berries or apples.
